These recipes are adapted from dishes we learned many years ago during a cooking class with a lovely Indian lady in Tokyo. Since then, we have continued refining and adapting them through our travels, home cooking, and years of sharing meals with friends and family. The result is a collection of recipes that combine bold flavour, warming spices, and practical techniques that are approachable for everyday cooking.
